Summer Greens and Freekeh Salad

A bright fresh salad, perfect for a Summer BBQ. A mix of raw summer salad veggies gives this salad a nice crunch also.

This was the first time I had fennel and I really like it in my salads now. Its a nice fresh taste. I even like it in some coleslaw recipes.  This was also the first time I have cooked with and eaten freekeh. A nice grain to eat and cook with.

Summer Greens and Freekeh Salad

Serves: 6-8
  • 200g cracked freekeh, rinsed
  • 250g fresh green beans, trimmed, halved diagonally, blanched
  • 2 bunches asparagus, halved, blanched
  • 4 radishes, thinly sliced
  • 2 baby fennel bulbs, thinly sliced
  • 2 green shallots, thinly sliced

  • Buttermilk Dressing
  • ¼ cup buttermilk
  • 1 lemon, rind finely grated, juiced
  • 1½ tablespoon whole egg mayonaise
  • 1 tablespoon sour cream
  • 1 tablespoon olive oil
  • 1 tablespoon white balsalmic vinegar
  • 1 teaspoon horseradish cream
  1. Place the freekeh in a saucepan and cover with cold water. Bring to the boil over medium heat. Reduce the heat to low and simmer, covered, stirring occasionally for 20 - 25 minutes or until tender. Line a tray with paper towel, drain freekeh and refresh under cold running water. Spread over prepared tray to dry
  2. For the dressing whisk all ingredients together in a bowl and season.
  3. Place the freekeh beans, asparagus, radish, fennel, and shallots in a bowl. Pour over dressing and toss gently to combine. serve
