Creamy Paprika Chicken with Mushrooms

This Is a yummy filling pasta that doesn’t take very long to cook at all. Very minimal cooking steps.

The reason for mentioning this is one of my friends told me that if there is too many steps, its just too scary lol. As someone that loves to cook I never realised this before lol. Will have to start taking note of this from now on. But then again my sister freaks out if there are more than 4 ingredients lol. But thats another story lol.

Here are our mushrooms all cut up. Im a big fan of mushrooms. Especially enoki, they are a really different texture that I love. But are a little on the expensive side at the grocery store so I don’t cook with them as much as I would like too. Im going to have a go at growing my own mushrooms one day. YES one day, its on the list! Will take pictures when I do.

Actually one of my friends use to work at a mushroom farm, but doesn’t eat them himself. Im not sure if its the taste or what their grown in lol. Will find out and get him to help with my growing of mushrooms, when I get around to it.

Here we have our chicken and mushroom sauce all ready for the spinach to go in. I take my pan off the heat when adding spinach at the end of any recipe. I think their is always enough heat to cook the spinach. Its such a delicate vegetable and you don’t want to cook all the goodness out. Plus I think it just turns into a soggy mess and yukky texture when overcooked. But everyones different. You can leave it on heat and cook it up more.

Hay my mothers been boiling the life out of her veggies her whole life lol. OH the cabbage……………….yuk (so glad she cant use a computer either, she would be completely horrified at that statement lol, but its true, although she has improved over the years. Except when it comes to cooking meat, Yet another story lol)

Creamy Paprika Chicken with Mushrooms

Creamy paprika chicken with mushrooms served on pasta
Serves: 4
Ingredients
  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 400g/ 14oz button mushrooms, quartered
  • 2 garlic cloves crushed
  • 2 teaspoons mild paprika
  • 400g/ 14oz chicken tenderloins cut into cubes
  • ¾ cup reduced-fat thickened cream
  • 1 bunch english spinach, trimmed, roughly chopped
  • 375g/ 13.2oz packet dried egg pasta to serve.
Instructions
  1. Heat oil in a deep frying pan over medium-high heat. Cook onion, stirring for 5 minutes or until softened. Add mushroom, cook stirring for a further 5 minutes or until golden and tender.
  2. Add garlic and paprika. Cook stirring for 1 minute. Add chicken, cream and ½ cup cold water. Bring to the boil. Reduce heat to low, simmer stirring occasionally, for 7 minutes or until chicken is cooked through. Remove from heat and stir in spinach.
  3. Meanwhile cook pasta in a pan of boiling salted water following packet directions. Serve chicken with pasta.
