Cottage Pie Potatoes

cottage pie potato recipe

Delicious winter food….I love mashed potato and cheese, the perfect combo. Not so great for the waistline…

We only have a family of 3 so with the leftover mince its just perfect on toast for breakfast the next morning.

To save time you can zap your spuds in the microwave instead of baking.  Just pierce them with a fork, then wrap individually in a sheet of paper towel and cook until tender. Times will vary depending on your microwave.

Baked potato stuffed with mince with fluffy mashed potato and cheese on top.
Serves: 4-6
Ingredients
  • 6 large potatoes, scrubbed and dried
  • ¼ cup hot milk
  • 1 cup grated cheddar cheese
  • steamed veggies to serve

  • 1 large onion
  • 500g beef mince
  • ⅓ cup tomato paste
  • 1 carrot grated
  • 1 cup water
  • 2 tablespoons worcestershire sauce

Instructions
  1. Pierce potatoes all over with a fork. Place potatoes directly on an oven rack in a hot oven (200C). Cook for about 50 minutes or until tender. Remove. Cool slightly.

  4. Add milk and half of cheese to potato flesh. Season with salt and pepper and mash to combine.
  5. Spoon beef filling into potato shell Top with mashed potato and sprinkle with remaining cheese.
  6. Cook in a hot oven (200C) for about 15 minutes or until heated through. Serve with steamed veggies.
