Chicken and Cabbage Stir Fry

Now I know this doesn’t look that appetising, especially when its main ingredient is cabbage. BUT its actually really nice. My tip is don’t cook your cabbage for long, leave a little crunch. Unless you like it cooked a little more. I know my mother likes to cook the life out of her cabbage, well I know she used too lol.

I am on a health kick at the moment, and trying to consume 1200 calories per day. I think rabbits consume more than 1200 calories per day, REALLY!

But anyway this is really low in calories.

Well if your on a diet and want something low cal, filling and pretty tasty, this is your recipe. Actually I would eat this even if I wasn’t on a diet. And its really easy to make, you can whip it up in no time. So a really good busy work night meal.

But if your feeding children that don’t eat their veggies, don’t even try it!

Im serious, my husband is worse than ANY child when it comes to eating fruit and vegetables. So hiding veggies is a must in this house. If I say its a good veggie smuggler than you know its passed ‘the husband test’

When I looked at his plate after he had eaten this I swear he ate all the chicken and NO cabbage. He honestly is ridiculous lol

Chicken and Cabbage Stir Fry

Low calorie chicken and cabbage stir fry.
Serves: 4
  • 2 large chicken breast cut into thin strips
  • 1 teaspoon olive oil
  • 3 cups finely shredded cabbage
  • 2cm piece ginger finely grated
  • 2 garlic cloves, crushed
  • 1 tablespoon cornflour
  • ½ cup water
  • 1 tablespoon soy sauce
  • 1 tablespoon kecap manis
  1. Mix together the water, cornflour, soy sauce and kecap manis and set aside.
  2. Heat oil in a large non-stick wok. Add chicken and stir fry for 3 minutes. Add garlic and ginger and stir fry for a further 2 minutes.
  3. Add sauce mixture to chicken and stir through until starts to thicken slightly. Then add cabbage and stir fry for a further 2 minutes or until chicken is cooked through and cabbage is cooked to your liking.Serve
Cook cabbage to your liking. I like my cabbage more on the raw side with a little crunch still. But everyones different.
