Cacao, Fruit and Nut Balls

These are amazing tasting healthy treats. You just cant stop at one!

I actually cant stop eating them. I’m not a huge fan of dried fruit or trail mix but this mix blended up is just perfect. They are a perfect chewy, chocolatey treat. They also taste awesome chopped up and stirred through greek yoghurt, YUM.

These take 15 minutes to whip up and are just so easy to make.  And with zero cooking anyone can make them.

The reason the coconut goes yellow is because all the natural oils from the nuts.

Perfect chewy, chocolatey fruit and nut balls.
Serves: about 25
Ingredients
  • 200g blanched almonds
  • ¼ cup pepitas
  • 250g pitted dried dates
  • ¼ cup cacao powder
  • 2 tablespoons black chia seeds
  • ⅓ cup goji berries
  • 1½ tablespoons water
  • 1 teaspoon vanilla bean paste
  • ⅓ cup desiccated coconut
Instructions
  1. Place almonds and pepitas in a food processor. Process until finely chopped. Add dates, cacao, chia seeds and goji berries and process until combined. Add water and vanilla and process until mixture forms a paste.
  2. Using damp hands roll tablespoons of mixture into balls. Roll in coconut and refrigerate, covered for about an hour or until firm.
Notes
Makes about 25 balls depending on the size you like to make them.
Cocoa powder is fine if that's all you have on hand or cannot find cacao powder. Cacao powder is the better health option as its packed with antioxidants and less processed than cocoa powder.
Keep these in the refrigerator for upto a week.
